…who decided to combine their experience, know-how, dreams and vocation for leadership to set up a company with a youthful, dynamic and innovative spirit, specialising exclusively in extra-virgin olive oil (EVOO) of the finest quality.

Innovation

Innovation is one of Olivais do Sul’s identifying characteristics. We are based in a region that is a world benchmark for olive-growing, and we have our own fully up-to-date olive-oil mill.

We have opted for modern, integrated, ecological production methods in the Alentejo region of Portugal, in privileged surroundings below Alqueva reservoir, one of the largest in Europe. Olivais do Sul is based in the heart of a region that in only a few years has managed to position itself as a worldwide benchmark for the modern olive-growing, both en seto (a superintensive plantation layout of alternating rows) and en copa (a less intensive layout, allowing the tree growth to spread naturally), with olive groves that are among the most productive and competitive in the world.
 

We have our own fully up-to-date olive-oil mill (almazara) where we produce oil for ourselves and for our customers, following our philosophy of applying innovation and the latest technological developments to the preparation of a traditional foodstuff that plays such a vital role in the history of the Mediterranean region.

Despite only being in business for little more than a single decade, the quality of our olive-oil products has been recognised by means of prizes won at international competitions held in countries including China, Argentina, the United States, Spain and Portugal…

Besides our cutting-edge laboratory at the almazara, since the firm’s earliest days Olivais do Sul has been interested in taking part in scientific studies both in our groves and at our mill.

The most significant of these studies include one studying the use of enzymes for olive-oil extraction. One of the outdoor projects has been to explore the efficient use of irrigation water (called OLIVOREG) in partnership with the Agronomy Institute at the University of Lisbon and the firms Microsoft and Consular, with funding from the EU’s PRODDER programme. The study, which took four years to complete, has produced some interesting results for both the scientific community and for the sector.

Another project that is also under way, this time with the University of Évora, is to study the mechanical pruning of en seto olive groves. Early results were presented at the National Olive-Growing Conference in 2018. Another study, again with Évora University, is looking into bats and their impact on olive pests (Prays oleae). The company has taken part in many forums, sharing our experience in the many different aspects of a day’s business at Olivais do Sul.
