Extra-virgin olive oil, complex, fresh, well-balanced, moderately fruity, with green, ripe olives, with subtle notes of green olive leaf and high notes of fresh fruit (tomato), very slightly bitter and with a relatively persistent finish with hints of nuts, mostly bitter but also cashew.
